Crunchy Spinach Casserole If I had to be a vegetarian I would be in big trouble because I'm not all that keen on eating veggies, especially those nutritionally important leafy green vegetables. I'll pass on plain wilted or steamed spinach over and over again, but I could sit down and eat all of this spinach casserole and smile. Yes, it's that good. Best of all, it's super easy to make. Portion sizes of the ingredients are totally forgiving, so if you use a little more or a little less of something, no worries! Crunchy Spinach Casserole 1 pkg. (12 oz.) frozen chopped spinach 1 pkg. (8 oz.) cream cheese, softened 1/2 tsp. salt Pinch cayenne pepper (or to taste) 1 stick (1/2 c.) butter, melted 1/2 pkg. (~7 oz.)  Pepperidge Farm Herb Seasoned Stuffing Preheat oven to 350 °F. Gratitude Day 6: Banana Bread, Knitting and Knitting Friends

Today wasn't the greatest day for me. A weather front pushed through, my fibromyalgia acted up, I had too much to do and no energy to do it. It's a recipe for a bad mood. So I did the best I could to take care of daddy, procrastinated everything non-essential, and accomplished two things: banana bread and knitting. The banana bread was not because I was feeling inspired to bake, rather I didn't have the heart to waste overripe bananas. I didn't have one key ingredient to make my old standard recipe so I tried a new one. It was excellent! Daddy loved it so that was good. Today is Thursday and I look forward to Thursday nights all week because it's time to knit with friends at The Yarn Haven. I love to knit, though I don't get as much done as I did a few years ago. I love my knitting friends even more. These women have been my cheerleaders as I crawled my way out of near total disability with fibromyalgia, battled my demons, and slowly reclaimed an active l...

Happy New Year

I started the New Year by sleeping in, then I turned on the TV to watch the news. On the Today Show they were discussing New Year's traditions. Here in the Southeastern USA, everyone talks about eating black-eyed peas and collard greens for good luck during the year. I can't stand either so I guess I've lived with bad luck all my life. Not really, I seem to be just fine. But when  Kathie Lee and Hoda said the Dutch eat doughnuts on New Year's my ears perked up. I'm part Dutch and I've never heard anything about doughnuts. I confess I had visions of Krispy Kremes dancing in my head, but I went to the source to get the real answer - mother. I asked mother about the Dutch and doughnuts and she started laughing. "Not doughnuts," she said, "oliebollen!" Yes, a long story ensued. Mother is Dutch and lived in Holland for part of her early life, especially after WWII.
